  • Chocolate and Vanilla Cake
  • Rainbow Cake
  • Orange Cake
  • Fruit Cake
  • Vanilla and Chocolate Roulade
  • Coffee Cake
  • Date Cake
  • Carrot Cake with cream cheese frosting
  • Banana Snack Cake
  • Red Velvet Cake
  • Chocolate and Vanilla Sponge
  • Decorating Module:
  • Piping techniques with butter cream (lines/dots, borders, shells, frills, ruffles, stars etc.)
  • Shaped character cake with butter cream decorations
  • Basket weave with butter cream roses and leaves
  • Frozen butter cream transfer
  • Fondant techniques (making fondant icing and decorating with cut outs, bows, flowers, drapes, swags, imprinted/textured ribbons, and borders)
  • Fondant shaped character cake with 2D and 3D effect cutouts
  • Royal icing piping techniques (embroidery work and ribbon insertions)
  • Fondant 3D cake
  • Modeling with fondant (Basket/sack with fondant and hand crafted fruits)
  • Flood work, color flow, sugar dusting and edible cake tops and ornaments
  • Sugar flowers, leaves, and assembling floral spray on a cake (8 types of sugar flowers)

Lessons are completely practical, and the students would be having hands on experience in making and decorating cakes.

Students will be working in groups on their 4th and 7th lessons to decorate their cakes.
